Foivos Papastratis F Retsina ONE OFF

ONE OFF is the new project from Foivos Papastratis, featuring limited vinifications, each time in a different wine-producing region at the wineries of good friends, with different varieties and different techniques, for one time only. For this year, the project involves the creation of a retsina in collaboration with Eleni Kechri. The One Off retsina is made from Assyrtiko grapes sourced from the Goumenissa region and resin from Evia. A large portion of the wine ages for about 4 months in new French oak barrels, and the remainder in stainless steel tanks.

In the glass, we encounter a medium lemon color. On the nose, we find aromatic characteristics of pine, citrus zest, rosemary, mastic, and jasmine, with herbal notes and some hints of yeast complementing its character. On the palate, the body is medium+, elegant, and balanced, with lively acidity and a lingering finish.
