Aoton means the finest of it's kind, in ancient greek, something that clearly depicts what the wines produced are; finest quality, with respect to the authenticity of the Mesogeia region of Attica, and the varietie's potential. Savvatiano is released only when the oenologist, Sotiris Ginis, decides that it's the right time, so both the variety and the unique terroir of Attica are highlighted and emphasised.

  • Dark yellow, almost gold in color, made with minimal intervention and 8 months of battonage, which makes it stand out
  • The element of nuts and controlled oxidation is distinguished, with light fruity aromas on the background
  • Rich, tasty, over medium-bodied and fruity in the mouth, it does not resemble any other Savatiano, which shows the varietie's potential
