Orycton is produced entirely from initially free-flowing Santorini Assyrtiko juice. The grapes are collected from selected self-planted centuries-old vineyards, in the Akrotiri, Pyrgos and Megalochori areas of Santorini. The wine matures for 12 months on its lees with intensive batonnage. It is bottled in 2,800 unique bottles, underlining how unique and rare it is.

It has a light lemon color. The aromas consist of citrus fruits, white-fleshed peach, herbs, followed by subtle mineral notes. Full and balanced mouthfeel, with high acidity and a long aftertaste.
