Apostolos Thymiopoulos produces Blanc Des Coteaux from the varieties Malagouzia 50%, Assyrtiko 25%, Vidiano 20%, Aidani 5%, cultivated in the bio certified vineyards on the slopes of Vermio mountain (close to the Phytia village) at an altitude of 450-650 meters. Malagouzia is vinified in amphorae with grapes' skins for a few days and after separating them, it remains with its fine lees. The same technique is also used for Vidiano and Aidani. Assyrtiko undergoes a long-term whole bunch slow pressing in a pneumatic press and ferments in 2000 liter wooden barrels. Then the Assyrtiko remains for one year in a wooden barrel, while the other varieties remain for 10 months in the amphorae with their lees. It is then bottled unfiltered and remains in the bottle in the winery's cellar until its release.

It has a golden yellow color, with orange highlights. The aromas are intense and complex, consisting of citrus and stone fruits, white flowers, violets, with notes of honey, nuts & herbs while hints of minerality complete its character. Mouthfeel is medium+ bodied, with a slight oiliness that balances well with the acidity and soft tannins that lead to a good lasting aftertaste.
