Vassaltis Vineyards PetNat 2023

Pet Nat (petillant naturel) is a sparkling created using the method ancestral, in which the wine begins fermentation in stainless steel tanks, and then, before its completion, it is bottled entrapping CO2 which creates a gentle foaming. Fermentation is completed in the bottle with results to a slightly cloudy wine. The aromas consist of citrus & stone fruits, flowers, followed by notes of biscuit and honey. Mouthfeel is medium bodied with good acidity and a delicate foam.
