The production of Ariousios Assyrtiko is carried out following the red winemaking method. Fermentation takes place with the lees remaining in the tank for about twenty days.

In the glass we find a deep orange color. On the nose we find aromas of candied citrus peels, herbs, yeast, followed by notes of jasmine. In the mouth, the body is medium, fine tannins, pronounced acidity and a pleasant aftertaste.
