Domaine de Kalathas 10+12 2021 (Vielles Vignes)
The Estate: Domaine de Kalathas (DDK) is created by the Frenchman Jerome Binda, former graphic designer and antique dealer, who found in Tinos his second home that soon became his main one. Jerome adds his piece in the scene of Greek Natural Wines, based on the local varieties of Aspro Potamisi, Black Potamisi, Koumariano and Rosaki. The wines are extremely hard to find, they are bottled without adding sulphites, and the cultivation has been organic since 2013.
The wine: 100% Aspro Potamisi, a variety that has not yet emerged and that Jerome Binda believes in its potential. Vines that are more than 100 years old in the form of aplotaria, manual harvest, fermentation by autochthonous yeasts and no addition of sulphites (total 0). Lovely wine with aromas of apricots and peaches, playful mouthfeel with some tannins on the finish. Exotic, with mild acidity in a game between sweetness and tannins. Store in a cool place until ready to use.
