Omelette with zucchini and mint (Tiritim)

Preparation

Peel the onions, wash them well and finely chop. Put them in a pan with plenty of oil and when it burns pour the onions and zucchini and fry until they start to get gold-brown. Then drain the oil and in the same pan, pour with the zucchini the well beaten eggs, the mint, the cheese, salt and pepper. Fry the omelette until it gets browned on one side, and then, with the help of a dish turn it over carefully and fry for another 2 to 3 minutes. We can eat it warm or lukewarm, but it is fine even cold.

Ingredients

  • 4 zucchini cut into rings
  • 5 spring onions
  • 12 eggs
  • 200 gr. grated salty gruyere
  • 3 tablespoons finely chopped fresh mint
  • Salt and lots of freshly ground pepper
  • Olive oil for frying
