Produced in Pitsilia, at 1.500 meters altitude. Pale yellow color with a complex nose expressive of chamomile, sage and peach. Really impressive. Layered, medium full bodied and creamy on the palate, with a long lingering finish - this is a benchmark for Cypriot wine. Effortless and delicious Xynisteri. Six months fermentation on the lees, in stainless-steel tanks and partly oak matured for 3 months, with DIAM closure. The creaminess on the palate with the mineral, crispy texture make this perfect for grilled prime fish, poultry, langoustines and lobster.  Can be aged for 5-7 years following the vintage.
