Matthaios Argyros and Manolis Chlorides, in collaboration with Argyros Estate, have created a "traditional" Santorini, a Santorini that comes from two of the island's top vineyards and is produced with limited human intervention, according to earlier models. For this reason, the fermentation takes place in a cement tank of the Argyros estate beneath the soil, while the wine stays on the lees for 14 months with periodic battonage in the tanks of the Volcanic Slopes. It has a yellowish color that after its opening and its ventilation shows a mineral character, along with the intense aromas of lemon, citrus and exotic fruits. Full mouth, balanced and at the same time luxurious, with minerality and long aftertaste.
