Patoinos winery is an amazing project for the development and restoration of viticulture in Patmos, which was initiated in 2011 by the Greek member of the Swiss parliament Joseph Zissiadis. It includes a 20-acre vineyard, an olive grove of 10 acres, but also plans for a bank of islandic seeds and a school for vine and wine training. The winery produces three wines, two from Asyrtiko and one red wine from Mavrothiriko, whick is still in progress (Yannis Karakasis MW-"Natural Wines in Greece").
Cultivation is biodynamic, awaiting the certification. The fermentation takes place in stainless steel tanks, followed by 8 months of maturation with all lees. The total production is only 5.000 bottles, while the addition of sulphites is the lowest possible.
