Aivalis Winery was established in 1997 by Christos Aivalis. The varieties cultivated at the privately owned vineyard of 35 acres are: Agiorgitiko, Syrah, Cabernet and Merlot. The chosen cultivation techniques aiming to low yields, in combination with the noteworthy investments, contribute to the production of high quality wines. The Domaine has adopted the philosophy of non-intensive agriculture, where the addition of fertilizer is almost excluded, so that the root system penetrates the soil to a much deeper level, seeking moisture and nutrients. The wines keep their authentic and unique character associated with the terroir, since stabilization and filtration are not applied during the vinification process.
